Congee Recipe Stovetop: Classic Chicken Congee

Ingredients:

1 cup of jasmine rice
6 cups of chicken broth
1 boneless, skinless chicken breast
1 inch of ginger, sliced
2 cloves of garlic, minced
Salt and pepper to taste

Steps:

In a large pot, bring the chicken broth to a boil.
Add the jasmine rice, ginger, and garlic to the pot. Reduce heat to low and simmer for about 40 minutes, stirring occasionally.
While the rice is cooking, season the chicken breast with salt and pepper and cook in a separate pan until fully cooked. Shred the chicken and set aside.
Once the rice is fully cooked and has a porridge-like consistency, stir in the shredded chicken. Cook for an additional 5 minutes to allow the flavors to meld together.
Serve hot with your favorite garnishes such as green onions, soy sauce, and sesame oil.

Congee Recipe Stovetop: Vegan Mushroom Congee

Ingredients:

1 cup of short-grain brown rice
6 cups of vegetable broth
1 cup of mixed mushrooms, sliced (such as shiitake, oyster, and cremini)
1 small onion, diced
2 cloves of garlic, minced
1 tablespoon of soy sauce

Steps:

In a large pot, bring the vegetable broth to a boil.
Add the brown rice, mushrooms, onion, and garlic to the pot. Reduce heat to low and simmer for about 45 minutes, stirring occasionally.
Stir in the soy sauce and cook for an additional 5 minutes to allow the flavors to meld together.
Serve hot with a drizzle of sesame oil and a sprinkle of toasted sesame seeds.
