Classic Mapo Tofu Recipe

Ingredients:

– 1 block of firm tofu
– 1/4 lb ground pork
– 2 cloves of garlic, minced
– 1 inch piece of ginger, minced
– 2 green onions, chopped
– 2 tbsp soy sauce
– 1 tbsp hoisin sauce
– 1 tbsp chili bean paste
– 1 tsp Sichuan peppercorns
– 1/2 cup chicken broth
– 1 tsp cornstarch mixed with 1 tbsp water
– 1 tbsp vegetable oil

Steps:

1. Cut the tofu into small cubes and set aside.
2. Heat the vegetable oil in a pan over medium heat.
3. Add the ground pork and cook until browned.
4. Add the garlic, ginger, and green onions and cook for another minute.
5. Stir in the soy sauce, hoisin sauce, and chili bean paste.
6. Add the Sichuan peppercorns and chicken broth and bring to a simmer.
7. Gently stir in the tofu cubes and simmer for 5-10 minutes.
8. Stir in the cornstarch mixture to thicken the sauce.
9. Serve hot with steamed rice.

Spicy Mapo Tofu Stuffed Bell Peppers

Ingredients:

Authentic Mapo Tofu (麻婆豆腐) – Omnivore’s Cookbook

– 4 bell peppers
– 1 block of firm tofu
– 1/4 lb ground turkey
– 2 cloves of garlic, minced
– 1 inch piece of ginger, minced
– 2 green onions, chopped
– 2 tbsp soy sauce
– 1 tbsp gochujang
– 1 tsp gochugaru
– 1/2 cup chicken broth
– 1 tsp cornstarch mixed with 1 tbsp water
– 1 tbsp vegetable oil

Steps:

1. Preheat the oven to 375°F.
2. Cut the tops off the bell peppers and remove the seeds.
3. In a bowl, mix together the ground turkey, garlic, ginger, green onions, soy sauce, gochujang, and gochugaru.
4. Stuff the bell peppers with the turkey mixture.
5. Heat the vegetable oil in a pan over medium heat.
6. Add the tofu and cook until browned.
7. Stir in the chicken broth and bring to a simmer.
8. Gently place the stuffed bell peppers in the pan.
9. Cover and bake in the oven for 25-30 minutes.
10. Stir in the cornstarch mixture to thicken the sauce.
11. Serve hot with a side of kimchi.
