Classic Fish and Chips with a Twist

Ingredients:
– 4 cod fillets
– 1 cup of flour
– 1 tsp baking powder
– 1 cup of beer
– Salt and pepper to taste
– Vegetable oil for frying
– 4 large potatoes, cut into fries
– Malt vinegar for serving

Instructions:
1. In a large bowl, mix together the flour, baking powder, salt, and pepper.
2. Slowly pour in the beer, whisking until a smooth batter forms.
3. Heat the vegetable oil in a deep fryer or large pot to 375°F.
4. Dip each cod fillet into the batter, coating evenly.
5. Carefully lower the battered fish into the hot oil and fry for 5-7 minutes, or until golden brown and crispy.
6. In the meantime, fry the potato fries until golden and crispy.
7. Serve the fish and chips hot with malt vinegar on the side.

Ingredients:
– 8 large mushrooms
– 1/2 lb black pudding, crumbled
– 1/2 onion, finely chopped
– 1 garlic clove, minced
– 1/4 cup breadcrumbs
– Salt and pepper to taste
– Fresh parsley, chopped

Instructions:
1. Preheat the oven to 375°F.
2. Remove the stems from the mushrooms and finely chop them.
3. In a skillet, cook the black pudding, onion, garlic, and chopped mushroom stems until browned.
4. Remove from heat and stir in the breadcrumbs, salt, pepper, and parsley.
5. Stuff each mushroom cap with the black pudding mixture.
6. Place the stuffed mushrooms on a baking sheet and bake for 15-20 minutes, or until the mushrooms are tender.
7. Serve hot as a delicious appetizer or side dish.
