Korean Kimchi Pancake Recipe

Ingredients:
– 1 cup all-purpose flour
– 1 cup water
– 1 cup chopped kimchi
– 1/2 cup sliced scallions
– 1/4 cup kimchi brine
– 1 egg
– Salt and pepper to taste
– Vegetable oil for frying

Steps:
1. In a large bowl, mix together the flour, water, kimchi, scallions, kimchi brine, egg, salt, and pepper until well combined.
2. Heat a non-stick skillet over medium heat and add a drizzle of vegetable oil.
3. Pour a ladleful of the pancake batter into the skillet and spread it out evenly into a round shape.
