Classic Ajvar Recipe

Ingredients:

3 red bell peppers
2 eggplants
2 cloves of garlic
1/4 cup olive oil
Salt and pepper to taste

Instructions:

Preheat the oven to 400°F.
Cut the bell peppers and eggplants in half and place them on a baking sheet.
Roast the vegetables in the oven for about 30 minutes, or until they are soft and slightly charred.
Remove the vegetables from the oven and let them cool slightly.
Peel the skin off the peppers and eggplants, then chop them into small pieces.
In a food processor, combine the roasted vegetables, garlic, olive oil, salt, and pepper.
Pulse the mixture until it reaches your desired consistency.
Transfer the ajvar to a bowl and serve as a dip or spread.

Ajvar-Stuffed Chicken Breast

Ingredients:

4 chicken breasts
1 cup ajvar
1/2 cup feta cheese
Salt and pepper to taste
1 tablespoon olive oil

Instructions:

Preheat the oven to 375°F.
Cut a pocket into each chicken breast.
Stuff each chicken breast with ajvar and feta cheese.
Season the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear the chicken breasts on both sides until they are golden brown.
Transfer the chicken breasts to a baking dish and bake in the oven for 20-25 minutes, or until cooked through.
