Classic Orh Nee with Shallot Oil

Ingredients:

500g yam (taro)
200g sugar
200ml coconut milk
100ml water
1/2 tsp salt
Shallot oil for drizzling

Steps:

Peel and chop the yam into small pieces.
Steam the yam until soft, then mash it into a smooth paste.
In a separate pot, combine the sugar, coconut milk, water, and salt. Cook over low heat until the sugar has dissolved.
Add the mashed yam to the pot and stir well to combine. Cook for another 5-10 minutes until the mixture thickens.
Transfer the orh nee to a serving dish and drizzle with shallot oil before serving.

Orh Nee Pancakes with Shallot Oil Infused Syrup

Ingredients:

1 cup all-purpose flour
1/2 cup coconut milk
1/4 cup water
2 eggs
1/4 tsp salt
Shallot oil infused syrup (made by heating shallot oil with sugar and water)

Steps:

In a mixing bowl, whisk together the flour, coconut milk, water, eggs, and salt until smooth.
Heat a non-stick pan over medium heat and lightly grease with shallot oil.
Pour a ladle of pancake batter into the pan and cook until bubbles form on the surface. Flip and cook the other side until golden brown.
Repeat with the remaining batter to make a stack of pancakes.
Drizzle the pancakes with the shallot oil infused syrup before serving.

Orh Nee Ice Cream with Shallot Oil Drizzle

Ingredients:

2 cups heavy cream
1 cup condensed milk
1/2 cup mashed yam (from steamed yam)
1/4 tsp salt
Shallot oil for drizzling

Steps:

In a mixing bowl, whip the heavy cream until stiff peaks form.
Fold in the condensed milk, mashed yam, and salt until well combined.
Pour the mixture into a loaf pan and freeze for at least 4 hours or until firm.
Scoop the orh nee ice cream into bowls and drizzle with shallot oil before serving.
