Classic Peranakan Sayur Lodeh Recipe

Ingredients:

1 cup coconut milk
1 cup water
1 tbsp vegetable oil
1 lemongrass stalk, smashed
2 kaffir lime leaves
1 block tofu, diced
1 cup green beans, sliced
1 cup cabbage, chopped
1 carrot, sliced
1 tsp salt
1 tsp sugar

Steps:

In a large pot, heat vegetable oil and sauté lemongrass and kaffir lime leaves for 2 minutes.
Add coconut milk and water, bring to a simmer.
Add tofu, green beans, cabbage, and carrot. Cook for 10 minutes.
Season with salt and sugar, adjust to taste.
Serve hot with steamed rice.

Spicy Peranakan Sayur Lodeh with Sambal Recipe

Ingredients:

In a large pot, heat vegetable oil and sauté red chili peppers, lemongrass, and kaffir lime leaves for 2 minutes.
Add coconut milk and water, bring to a simmer.
Add tofu, green beans, cabbage, and carrot. Cook for 10 minutes.
Season with salt and sugar, adjust to taste.
Serve hot with a dollop of sambal on top.
