Classic Ratatouille

Ingredients:

1 eggplant, diced
1 zucchini, diced
1 yellow squash, diced
1 red bell pepper, diced
1 onion, diced
2 cloves of garlic, minced
1 can of diced tomatoes
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste

Steps:

Heat olive oil in a large skillet over medium heat.
Add the onion and garlic and sauté until fragrant, about 2 minutes.
Add the eggplant, zucchini, yellow squash, and red bell pepper to the skillet and cook until slightly softened, about 5 minutes.
Add the diced tomatoes, basil, oregano, salt, and pepper to the skillet and stir to combine.
Simmer the ratatouille for 10-15 minutes, until the vegetables are tender.

Spicy Ratatouille Pizza

Ingredients:

Pre-made pizza dough
1 cup of marinara sauce
1 cup of shredded mozzarella cheese
1/2 cup of sliced black olives
1/4 cup of sliced jalapeños
1/4 cup of diced red onion
1 cup of prepared ratatouille

Steps:

Preheat oven to 400°F.
Roll out the pizza dough on a baking sheet and spread the marinara sauce evenly over the dough.
Sprinkle the mozzarella cheese over the sauce and top with black olives, jalapeños, red onion, and spoonfuls of ratatouille.
Bake in the oven for 15-20 minutes, until the crust is golden brown and the cheese is melted and bubbly.
Remove from the oven, slice, and serve hot.
