Arabic Rice with Raisins Recipe

Ingredients:

– 2 cups of basmati rice
– 3 cups of water
– 1/2 cup of raisins
– 1/4 cup of slivered almonds
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 1 teaspoon of ground cinnamon
– 1 teaspoon of ground cumin
– Salt and pepper to taste
– Olive oil

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
2. In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.
3. Add the cinnamon and cumin to the pot, and stir to combine with the onion and garlic mixture.
4. Add the basmati rice to the pot, and stir to coat the grains with the spices.
5. Pour in the water, and bring to a boil. Reduce heat to low, cover the pot, and let simmer for about 15-20 minutes, or until the rice is cooked through.
6. While the rice is cooking, in a separate pan, toast the slivered almonds until golden brown.
7. Once the rice is cooked, fluff it with a fork and stir in the raisins and toasted almonds.
8. Season with salt and pepper to taste, and serve hot.

– 2 cups of long grain rice
– 4 cups of vegetable broth
– 1/2 cup of raisins
– 1/2 cup of cooked chickpeas
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 1 teaspoon of ground turmeric
– 1 teaspoon of ground coriander
– Salt and pepper to taste
– Olive oil

Instructions:

1. Rinse the long grain rice under cold water until the water runs clear. Drain and set aside.
2. In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.
3. Add the turmeric and coriander to the pot, and stir to combine with the onion and garlic mixture.
4. Add the long grain rice to the pot, and stir to coat the grains with the spices.
5. Pour in the vegetable broth, and bring to a boil. Reduce heat to low, cover the pot, and let simmer for about 20-25 minutes, or until the rice is cooked through.
6. Once the rice is cooked, stir in the raisins and cooked chickpeas.
7. Season with salt and pepper to taste, and serve hot.
