Classic Tomato Salsa

Ingredients:

Classic tomato salsa

4 ripe tomatoes, diced
1/2 red onion, finely chopped
1 jalapeno pepper, minced
1/4 cup fresh cilantro, chopped
2 cloves garlic, minced
Juice of 1 lime
Salt and pepper to taste

Instructions:

In a bowl, combine the tomatoes, red onion, jalapeno, cilantro, and garlic.
Add lime juice and season with salt and pepper.
Stir well to combine and refrigerate for at least 30 minutes before serving.

Spicy Mango Salsa

Ingredients:

1 ripe mango, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeno pepper, minced
Juice of 1 lime
Salt and pepper to taste

Instructions:

In a bowl, combine the mango, red bell pepper, red onion, cilantro, and jalapeno.
Add lime juice and season with salt and pepper.
Stir well to combine and chill in the refrigerator for at least 1 hour before serving.

Roasted Corn and Black Bean Salsa

Ingredients:

1 cup corn kernels
1 can black beans, rinsed and drained
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeno pepper, minced
Juice of 1 lime
1 tsp cumin
Salt and pepper to taste

Instructions:

In a skillet, roast the corn over medium heat until slightly charred.
In a bowl, combine the roasted corn, black beans, red onion, cilantro, and jalapeno.
Add lime juice, cumin, salt, and pepper. Mix well and refrigerate for at least 1 hour before serving.
