Classic Chimichurri Sauce

Ingredients:

1 cup fresh parsley
1/4 cup fresh cilantro
3 cloves garlic
1/2 cup olive oil
2 tbsp red wine vinegar
1/2 tsp red pepper flakes
Salt and pepper to taste

Instructions:

Combine parsley, cilantro, and garlic in a food processor and pulse until finely chopped.
Transfer mixture to a bowl and stir in olive oil, red wine vinegar, red pepper flakes, salt, and pepper.
Let the flavors meld together for at least 30 minutes before serving.

Chimichurri Marinated Grilled Skirt Steak

Ingredients:

1 lb skirt steak
1/2 cup chimichurri sauce

Instructions:

Marinate skirt steak in chimichurri sauce for at least 1 hour or overnight.
Preheat grill to high heat and grill steak for 3-4 minutes per side for medium-rare.
Let steak rest for a few minutes before slicing and serving with extra chimichurri sauce on the side.

Chimichurri Potato Salad

Ingredients:

2 lbs baby potatoes, boiled and halved
1/2 cup chimichurri sauce
1/4 cup diced red onion
1/4 cup diced bell pepper
Salt and pepper to taste

Instructions:

In a large bowl, combine boiled potatoes, chimichurri sauce, red onion, bell pepper, salt, and pepper.
Toss until well coated and refrigerate for at least 1 hour before serving.
Garnish with fresh parsley before serving.
