Classic Limoncello Recipe

Ingredients:

10 organic lemons
1 liter of high-proof vodka
2 cups of sugar
3 cups of water

Instructions:

Wash the lemons thoroughly and zest them using a microplane grater.
Place the lemon zest in a large glass jar and pour the vodka over it. Seal the jar and let it sit for at least 4 weeks in a cool, dark place.
After 4 weeks, strain the infused vodka through a fine mesh sieve to remove the lemon zest.
In a saucepan, combine the sugar and water and heat until the sugar is completely dissolved. Let the syrup cool completely.
Combine the infused vodka with the simple syrup and pour the limoncello into bottles. Let it chill in the freezer before serving.

Limoncello Ricotta Pancakes

Ingredients:

1 cup all-purpose flour
1/2 cup ricotta cheese
1/4 cup limoncello
1/4 cup sugar
1 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup milk
Zest of 1 lemon

Instructions:

In a mixing bowl, combine the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the ricotta cheese, limoncello, eggs, milk, and lemon zest.
Add the wet ingredients to the dry ingredients and mix until just combined.
Heat a skillet over medium heat and grease with butter. Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface.
Flip the pancake and cook for an additional 1-2 minutes until golden brown.
Serve the pancakes with a dollop of ricotta cheese and a drizzle of limoncello syrup.
