Classic Pineapple Coconut Milk Rice

Ingredients:

Coconut Rice
Coconut Rice

1 cup jasmine rice
1 cup coconut milk
1 cup water
1 cup diced pineapple
1/4 cup shredded coconut
1/4 cup chopped cilantro
Salt to taste

Instructions:

Rinse the jasmine rice until the water runs clear.
In a saucepan, combine the coconut milk, water, and a pinch of salt. Bring to a simmer.
Add the rinsed rice to the saucepan and stir well. Cover and cook on low heat for 15-20 minutes, or until the rice is tender.
Stir in the diced pineapple and shredded coconut. Cook for an additional 5 minutes.
Remove from heat and let the rice rest for 5 minutes. Fluff with a fork and garnish with chopped cilantro before serving.

Spicy Pineapple Coconut Milk Rice

Ingredients:

1 cup basmati rice
1 cup coconut milk
1 cup water
1 cup diced pineapple
1/4 cup chopped red bell pepper
1/4 cup chopped green onions
1 tsp curry powder
Salt and pepper to taste

Add the rinsed rice to the saucepan and stir well. Cover and cook on low heat for 15-20 minutes, or until the rice is fluffy.
