Classic Pineapple Fried Rice

Ingredients:

2 cups cooked basmati rice
1 cup diced pineapple
1/2 cup diced bell peppers
1/2 cup peas
1/4 cup chopped cashews
1/4 cup chopped cilantro
2 tbsp soy sauce
1 tbsp vegetable oil
1 tsp minced garlic
1 tsp grated ginger

Steps:

Heat vegetable oil in a pan over medium heat.
Add minced garlic and grated ginger, sauté for 1-2 minutes.
Add diced pineapple, bell peppers, and peas, cook for 5 minutes.
Add cooked rice, soy sauce, and chopped cashews, mix well.
Cook for another 5 minutes, stirring occasionally.
Garnish with chopped cilantro before serving.

Spicy Pineapple Curry Rice

Ingredients:

2 cups cooked jasmine rice
1 cup diced pineapple
1/2 cup diced carrots
1/2 cup diced onions
1/4 cup coconut milk
2 tbsp curry powder
1 tbsp vegetable oil
1 tsp cumin seeds
1 tsp red chili flakes

Steps:

Heat vegetable oil in a pan over medium heat.
Add cumin seeds and red chili flakes, sauté for 1 minute.
Add diced onions and carrots, cook for 5 minutes until softened.
Add diced pineapple and curry powder, cook for another 5 minutes.
Add cooked rice and coconut milk, mix well and simmer for 10 minutes.
Serve hot with a sprinkle of fresh cilantro on top.
