Cashew Chicken Stir Fry

Ingredients:

Chef John’s Cashew Chicken

1 lb chicken breast, sliced into thin strips
1/2 cup cashews
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
1 tsp sesame oil
1/2 tsp red pepper flakes
2 tbsp vegetable oil
Salt and pepper to taste

Instructions:

Heat vegetable oil in a large skillet or wok over medium-high heat.
Add chicken strips and cook until browned, about 5-7 minutes.
Remove chicken from skillet and set aside.
In the same skillet, add garlic, bell peppers, and onion. Cook until vegetables are tender, about 5 minutes.
Return chicken to the skillet and add soy sauce, oyster sauce, brown sugar, sesame oil, and red pepper flakes. Stir well to combine.
Simmer for another 2-3 minutes until sauce thickens slightly.
Stir in cashews and season with salt and pepper to taste.
Serve hot over rice or noodles.

Cashew Chicken Lettuce Wraps

Ingredients:

1 lb ground chicken
1/2 cup cashews
1 red bell pepper, diced
1/2 cup water chestnuts, chopped
2 green onions, chopped
2 cloves garlic, minced
1/4 cup hoisin sauce
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1/2 tsp red pepper flakes
Salt and pepper to taste
Lettuce leaves for wrapping

Instructions:

Heat a skillet over medium heat and cook ground chicken until browned and cooked through, about 5-7 minutes.
Add garlic, bell pepper, water chestnuts, and green onions. Cook for another 2-3 minutes.
In a small bowl, mix hoisin sauce, soy sauce, rice vinegar, sesame oil, and red pepper flakes.
Pour sauce over chicken mixture and stir well to combine. Simmer for another 2-3 minutes.
Stir in cashews and season with salt and pepper to taste.
Spoon mixture onto lettuce leaves and serve as wraps.
