Zucchini Bread Recipe Gluten Free

Classic Zucchini Bread

Ingredients:

2 cups grated zucchini
2 cups gluten free flour
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Directions:

Preheat oven to 350°F and grease a loaf pan.
In a large bowl, combine grated zucchini, sugar, oil, and eggs.
In a separate bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
Add dry ingredients to wet ingredients and mix until well combined.
Pour batter into loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let cool before slicing and serving.

Chocolate Chip Zucchini Bread

Ingredients:

2 cups grated zucchini
2 cups gluten free flour
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 cup chocolate chips

Directions:

Follow the same directions as the classic zucchini bread recipe, but fold in the chocolate chips before pouring the batter into the loaf pan.
Bake as directed and enjoy the delicious combination of zucchini and chocolate!
