Classic Vanilla Shortbread

Ingredients:

1 cup of butter, softened
1/2 cup of sugar
2 cups of all-purpose flour
1 teaspoon of vanilla extract

Steps:

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Stir in the vanilla extract.
Gradually add the flour and mix until a dough forms.
Roll out the dough on a floured surface to about 1/2 inch thickness.
Cut the dough into desired shapes using cookie cutters and place on the prepared baking sheet.
Bake for 12-15 minutes or until the edges are lightly golden.
Allow the shortbread to cool on the baking sheet before transferring to a wire rack to cool completely.

Chocolate Chip Shortbread

Ingredients:

1 cup of butter, softened
1/2 cup of sugar
2 cups of all-purpose flour
1 teaspoon of vanilla extract
1/2 cup of chocolate chips

Steps:

Follow the same steps as the classic vanilla shortbread recipe.
After mixing in the flour, fold in the chocolate chips.
Continue with rolling out the dough, cutting into shapes, and baking as directed.
Allow the shortbread to cool completely before enjoying the delicious chocolate chip flavor!
