Delicious Vegetarian Mandi Rice Recipe

Vegetable Mandi Rice

Ingredients:

2 cups basmati rice
1 onion, thinly sliced
1 carrot, diced
1 bell pepper, diced
1 zucchini, diced
1/2 cup frozen peas
2 cloves garlic, minced
1 tsp cumin
1 tsp coriander
1/2 tsp turmeric
1/2 tsp cinnamon
Salt and pepper to taste
3 cups vegetable broth
1/4 cup chopped fresh cilantro

Instructions:

Heat some oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the carrots, bell pepper, zucchini, and peas. Cook for a few minutes until the vegetables are slightly tender.
Stir in the cumin, coriander, turmeric, cinnamon, salt, and pepper. Cook for another minute until fragrant.
Add the rice and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked through.
Fluff the rice with a fork and stir in the fresh cilantro before serving.

Seafood Mandi Rice

Ingredients:

2 cups basmati rice
1 onion, diced
1 bell pepper, diced
1 tomato, diced
1/2 lb shrimp, peeled and deveined
1/2 lb mussels, cleaned and debearded
1/2 lb squid, sliced into rings
2 cloves garlic, minced
1 tsp paprika
1/2 tsp cumin
1/2 tsp coriander
Salt and pepper to taste
3 cups seafood broth
1/4 cup chopped fresh parsley

Instructions:

Heat some oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the bell pepper and tomato. Cook for a few minutes until the vegetables are softened.
Add the shrimp, mussels, and squid to the pot. Cook until the seafood is almost cooked through.
Stir in the paprika, cumin, coriander, salt, and pepper. Cook for another minute until fragrant.
Add the rice and seafood broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked through.
Fluff the rice with a fork and stir in the fresh parsley before serving.
