Classic Beef Meatballs

Ingredients:

1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1 egg
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh parsley

Steps:

Preheat oven to 400°F.
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, egg, garlic, salt, pepper, and parsley. Mix until well combined.
Shape mixture into 1-inch meatballs and place on a baking sheet.
Bake for 20-25 minutes, or until meatballs are cooked through.
Serve with your favorite pasta and marinara sauce.

Spicy Pork and Chorizo Meatballs

Ingredients:

1/2 lb ground pork
1/2 lb chorizo sausage, casing removed

1/4 cup grated Manchego cheese

Salt and pepper to taste

Steps:

Ingredients:

1 cup cooked lentils
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped fresh basil
1 clove garlic, minced
1/2 tsp cumin
Salt and pepper to taste

Steps:

Preheat oven to 375°F.
In a food processor, pulse cooked lentils until slightly mashed.
In a large bowl, combine mashed lentils, breadcrumbs, Parmesan cheese, sun-dried tomatoes, basil, garlic, cumin, salt, and pepper. Mix until well combined.
Shape mixture into 1-inch meatballs and place on a baking sheet.
Bake for 20-25 minutes, or until meatballs are cooked through.
