1 1/2 cups warm water
1 packet active dry yeast
4 cups bread flour
1 tablespoon sugar
2 teaspoons salt


In a small bowl, combine warm water and yeast. Let sit for 5 minutes until foamy.
In a large mixing bowl, combine flour, sugar, and salt. Add yeast mixture and stir until a sticky dough forms.
Cover bowl with a towel and let dough rise for 1-2 hours, until doubled in size.
Punch down dough and turn out onto a floured surface. Divide into two loaves and shape into ciabatta shapes.
Place loaves on a baking sheet lined with parchment paper. Let rise for another hour.
Preheat oven to 425°F. Bake ciabatta loaves for 20-25 minutes, until golden brown.
Let cool before slicing and serving.
