Classic Vegetable Spring Rolls

Ingredients:

– 1 pack of spring roll wrappers
– 1 cup shredded cabbage
– 1 cup shredded carrots
– 1 cup bean sprouts
– 1/2 cup chopped mushrooms
– 1/4 cup chopped green onions
– 2 cloves garlic, minced
– 2 tbsp soy sauce
– 1 tbsp sesame oil
– 1 tsp ginger, grated
– Salt and pepper to taste
– Oil for frying

Steps:

1. In a large skillet, heat oil over medium heat. Add garlic and ginger and sauté until fragrant.
2. Add in the cabbage, carrots, bean sprouts, mushrooms, and green onions. Cook until vegetables are tender.
3. Stir in soy sauce, sesame oil, salt, and pepper. Remove from heat and let cool.
4. Place a spoonful of the vegetable mixture onto the bottom corner of a spring roll wrapper. Roll up tightly, tucking in the sides as you go.
5. Heat oil in a deep frying pan. Fry the spring rolls until golden brown and crispy.
6. Drain on paper towels and serve hot with dipping sauce.

Spicy Tofu Spring Rolls

Ingredients:

– 1 pack of spring roll wrappers
– 1 block of firm tofu, drained and cubed
– 1 red bell pepper, sliced
– 1/2 cup sliced cucumber
– 1/4 cup chopped cilantro
– 1/4 cup chopped mint
– 2 tbsp soy sauce
– 1 tbsp sriracha sauce
– 1 tbsp rice vinegar
– 1 tsp sesame oil
– Salt and pepper to taste
– Oil for frying

Steps:

1. In a bowl, mix together soy sauce, sriracha sauce, rice vinegar, sesame oil, salt, and pepper. Add in the tofu and marinate for 30 minutes.
2. Heat oil in a skillet over medium heat. Add tofu and cook until browned on all sides.
3. Dip a spring roll wrapper in warm water for a few seconds until pliable. Place tofu, bell pepper, cucumber, cilantro, and mint on the wrapper.
4. Roll up tightly, tucking in the sides as you go.
5. Heat oil in a deep frying pan. Fry the spring rolls until crispy and golden brown.
6. Drain on paper towels and serve hot with a spicy dipping sauce.
