Traditional Stifado Recipe

Ingredients:

1 kg beef, cut into cubes
4 onions, sliced
4 cloves of garlic, minced
1 cup red wine
1/2 cup olive oil
1/4 cup red wine vinegar
1 cinnamon stick
4 cloves
4 bay leaves
Salt and pepper to taste

Instructions:

Heat olive oil in a large pot over medium heat.
Add the beef cubes and brown on all sides.
Add the onions and garlic, and sauté until softened.
Pour in the red wine and red wine vinegar, and bring to a simmer.
Add the cinnamon stick, cloves, bay leaves, salt, and pepper.
Cover and simmer on low heat for 2-3 hours, or until the beef is tender.
Serve hot with rice or crusty bread.

Stifado Pasta Recipe

Ingredients:

1 kg beef, cut into cubes
2 onions, sliced
4 cloves of garlic, minced
1 cup tomato sauce
1/2 cup red wine
1/4 cup balsamic vinegar
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
500g pasta of your choice

Instructions:

Heat olive oil in a large pot over medium heat.
Add the beef cubes and brown on all sides.
Add the onions and garlic, and sauté until softened.
Pour in the tomato sauce, red wine, balsamic vinegar, oregano, thyme, salt, and pepper.
Cover and simmer on low heat for 2-3 hours, or until the beef is tender.
Cook pasta according to package instructions.
Serve the stifado over the pasta and enjoy!
