Classic Pineapple Fried Rice

Ingredients:

2 cups cooked rice
1 cup diced pineapple
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon curry powder
1/4 cup chopped cilantro

Steps:

Heat oil in a large pan over medium heat. Add garlic and onion, sauté until fragrant.
Add bell pepper and pineapple, cook for a few minutes until slightly caramelized.
Push the vegetables to one side of the pan and pour beaten eggs into the other side. Scramble the eggs until cooked through.

Steps:

1/4 cup chopped basil
1/4 cup chopped mint

Steps:
